Mini Meatloaves

My kids absolutely LOVE when I make mini meatloaves. They are super simple to make and bake up in less time than a full size meatloaf.

Ingredients

  • Ground Beef – could swap for your favorite ground meat as well.
  • Garlic – fresh minced is great, or you could swap for 1 tsp garlic powder
  • Onion – finely diced is key. We don’t want large chunks in the meatloaf. I will sometimes run it through a cheese grater!
  • Shredded Cheese – perfect for a cheesy bite
  • Seasonings – salt, pepper, onion powder, and paprika
  • Bread Crumbs – if I’m out I will swap for ground up Ritz crackers also.
  • Egg – helps to hold everything together.

How to Make Mini Meatloaves

  • Preheat oven to 350.
  • In a large bowl combine all ingredients. Mix well.
  • Divide meat mixture into 10-12 equal pieces. Shape into mini loafs.
  • Place onto a parchment lined baking sheet.
  • Bake for 25-30 minutes or until internal temp is 160.

  • 3 cloves garlic minced
  • 1/2 onion finely diced
  • 1/2 cup cheese shredded
  • 1 tsp salt
  • 1/2 tsp pepper
  • 1 tsp onion powder
  • 1/2 tsp paprika
  • 1/2 cup bread crumbs
  • 1 egg
