Soft Dinner Rolls Recipe

These soft dinner rolls are a super simple to make with just 7 ingredients you should have everything in your pantry already!

Dinner rolls are one of those homey things that make dinner feel like it took hours to make. While in some aspects it did, the hands on time of these rolls is fairly minimal. I’m also always on the hunt for recipes that use basic ingredients. The great thing about making things at home is knowing that there isn’t a bunch of junk in the ingredients. Plus, every time I make these rolls everyone is in love and begging for more, so it’s a good thing that it makes a lot!

So what’s in the rolls?

  • yeast
  • sugar
  • milk
  • salt
  • butter
  • egg
  • flour

While this recipe does make 24 rolls, our family rarely needs that many rolls in one sitting. So I usually will make half of the dough into dinner rolls and then the other half I will do one of the following:

  • shape the rest of the dough into rolls, BUT freeze the rolls before the second rise
  • make the dough into a sandwich loaf
  • cinnamon rolls are also another great option

Now for the process. I always like to combine the yeast and milk with a little sugar before hand. You want to make sure that the yeast gets foamy to ensure that your yeast hasn’t gone bad. There’s nothing worse than going through the work only to realize that your yeast is no good.

Then combine the remaining ingredients, I always start with just 1 1/2 cups of milk and work my way up to the full 2 cups. It is easy to add more milk as needed, but if you add too much you have to add more flour and usually results in a denser roll.

Once all of the ingredients have been combined, knead the dough for 7-10 minutes. I like to start in my stand mixer with a dough hook and then finish by hand, but I also just let the stand mixer do all the work. Shape the dough into a ball and set back in the bowl to rise for about an hour. It should have doubled in size.

I then will separate the dough in half and make 12 dinner rolls and one of the above methods I mentioned earlier. I have a video on how I shape my rolls here if you’d like some help in that department. Let the rolls rise for another hour and then bake at 350 for 25-30 minutes.

Ingredients

  • 1 tbsp yeast
  • 2 tbsp sugar
  • 1/4 cup milk warmed
  • 1 1/2 tsp salt
  • 5 tbsp butter
  • 1 egg
  • 6 cups flour
  • 2 cups milk

Instructions

  • Combine 1/4 cup warmed milk with yeast and sugar. Set aside until foamy.
  • In a large bowl (I use my stand mixer) combine remaining ingredients, except milk.
  • Add in milk and yeast mixture and 1 1/2 cups milk. Mix together, adding in remaining milk if needed.
  • Knead mixture for 7-10 minutes. Shape into a ball, place back into bowl, and let rise for an hour, until doubled.
  • Place dough onto counter and divide into 24 sections (roughly 2.5 oz each). Shape into a ball and place on a baking sheet to rise four about another hour.
  • Bake at 350 for 25-30 minutes. Top with a little more butter if desired

These French Onion Scones are flaky, savory, and packed with caramelized onions, Gruyère cheese, and fresh thyme.

Ingredients
For the Scones:
2½ cups all purpose flour
½ tsp salt
1 tbsp baking powder
12 tbsp cold butter grated
1 egg
1 cup buttermilk
1 cup gruyere cheese shredded
1 tsp thyme
1/4 cup heavy cream
flakey salt

French Onions
2 onions
2 tbsp butter
1/2 tsp salt
1/2 tsp pepper
1/2 tsp thyme
2 cloves garlic minced
1 tbsp worcestershire sauce
1 tbsp balsamic vinegar

Instructions
French Onions
Add butter to skillet. Once hot and melted, add the onions, salt and pepper, and allow them to cook down and deeply caramelize for about 20 to 25 minutes, stirring frequently, until the onions become very dark, soft and jammy.
Add in the garlic, Worcestershire, and balsamic vinegar, and allow it to bubble up and reduce for about 30 seconds. Allow mixture to simmer until reduced.
Set aside to cool.
Scones
Preheat oven to 350℉. In a large mixing bowl, mix together flour, baking powder, and salt.
With a cheese grater, grate your cold butter and mix into dry ingredients with your hands until it reaches a crumbly texture.
Create a well in the center of your bowl and add egg and buttermilk. Mix until just combined.
Fold in shredded cheese and french onions; you want the dough to be just sticky enough to stick to your hands.
Pour mixture onto a floured surface and shape into a circle. Cut into 6-8 scones, the same way you would a pizza. Then place onto a parchment lined baking sheet.
Brush with heavy cream, sprinkle with flakey salt and bake at 350 degrees F for 20-25 minutes or until lightly golden on edges.
