These cookie ice cream sandwiches are made with a waffle chocolate chip cookie and vanilla ice cream to create the best summer dessert.
Ice cream sandwiches are hands down the best summer treat! But we are taking this up a notch by creating a waffle chocolate chip cookie for the base of our ice cream sandwich! The waffle cookie creates the absolute best sandwich.
Ingredients for Waffle Cookie Ice Cream Sandwich
- Vanilla Ice Cream – store bought or homemade
- Butter – unsalted and softened
- Sugar – both brown and granulated sugar
- Egg – makes the perfect texture of your cookie
- Vanilla Extract – perfect warming flavor
- Flour – all purpose flour
- Baking Soda – helps for the cookie to rise
- Salt – adds flavor
- Chocolate Chips – I personally love using milk chocolate, but your preferred type works.
How to Make Waffle Cookie Ice Cream Sandwiches
- In a large bowl combine softened butter, brown sugar, and granulated sugar. Mix together until light and fluffy.
- Add in egg and vanilla. Mix until well combined.
- Add in flour, baking soda, and salt. Mix until just combined.
- Fold in chocolate chips.
- Preheat a mini waffle maker and add approximately 2-3 tablespoons of cookie dough to the waffle maker. Close the lid and cook for 2-3 minutes.
- Remove cookie from the maker and repeat with remaining dough. Allow cookies to cool completely.
- To 6 of the waffle cookies add approximately 1/2 cup of ice cream. Top with remaining 6 waffle cookies.
- Enjoy immediately or store in an air tight container in the freezer.
