Ham, Egg, and Cheese Breakfast Bomb Biscuits

These ham, eggs and cheese are the perfect portable breakfast bomb biscuit that can be made ahead of time for an easy breakfast. 

How often do you find yourself needing to grab something to eat for breakfast as you are heading out the door? These breakfast bombs (along with my biscuit and gravy version) are a great breakfast to prep ahead of time and reheat in the mornings! They are easy to prepare but so delicious.

To make them ahead of time either make them completely, store in the refrigerator or freezer and warm them up in the morning (I’ll share my secret to make them taste freshly baked in the recipe) OR you can make them up the night before and pop them in the fridge before baking. Then in the morning all you need to do is pop them in the oven. 

Ingredients for Breakfast Bombs

  • Refrigerator Biscuits – we are making this simple! If you have a favorite homemade biscuit then use that!
  • Eggs – scrambled up your favorite way.
  • Milk – mixed with the eggs for a light and fluffy scramble.
  • Breakfast Meat – I used diced ham, but you can also use bacon or sausage.
  • Cheese – use your favorite shredded cheese
  • melted butter optional

How to Make Breakfast Bombs

  • Whisk together eggs and milk and season with salt and pepper. Cook in a skillet over medium heat. Set aside. 
  • Roll the biscuits into a small circle, then fill with cheese, ham, and eggs.
  • Pinch up to middle to seal and place seam side down on a baking sheet.
  • Brush with melted butter. Repeat with remaining biscuits. Bake according to biscuit package.

How to Reheat

My favorite way to reheat these is to just warm them back up in the oven! Bake for 5-7 minutes at 350 and you will have a biscuit bomb that tastes like you just baked it up! However, if you are in a hurry simply heat them completely in the microwave, then place onto a baking sheet. Broil for 1-2 minutes, watching closely! Nothing is worse than walking away and coming back to burnt breakfast bombs (trust me, been there!).

Customization ideas:

  • Add cooked vegetables, such as onions, peppers, or mushrooms.
  • Swap the cheese, such as Monterey Jack, Swiss, or pepper jack to the filling.
  • Add some sausage gravy
  • Drizzle with hot sauce for a spicy kick.

These breakfast biscuit bombs are so delicious! They are easy to prepare, incredibly delicious, and sure to become a family favorite. So go ahead, give it a try and start your day off right!

Notes

TIP: I like to double this recipe and freeze the remaining. Pull out what I want the night before to thaw in the fridge, then place in oven on broil for a few minutes to crisp the biscuit up. BECAREFUL not to forget them in the oven and watch carefully. Alternatively you can also reheat them in the air fryer!

These French Onion Scones are flaky, savory, and packed with caramelized onions, Gruyère cheese, and fresh thyme.

Ingredients
For the Scones:
2½ cups all purpose flour
½ tsp salt
1 tbsp baking powder
12 tbsp cold butter grated
1 egg
1 cup buttermilk
1 cup gruyere cheese shredded
1 tsp thyme
1/4 cup heavy cream
flakey salt

French Onions
2 onions
2 tbsp butter
1/2 tsp salt
1/2 tsp pepper
1/2 tsp thyme
2 cloves garlic minced
1 tbsp worcestershire sauce
1 tbsp balsamic vinegar

Instructions
French Onions
Add butter to skillet. Once hot and melted, add the onions, salt and pepper, and allow them to cook down and deeply caramelize for about 20 to 25 minutes, stirring frequently, until the onions become very dark, soft and jammy.
Add in the garlic, Worcestershire, and balsamic vinegar, and allow it to bubble up and reduce for about 30 seconds. Allow mixture to simmer until reduced.
Set aside to cool.
Scones
Preheat oven to 350℉. In a large mixing bowl, mix together flour, baking powder, and salt.
With a cheese grater, grate your cold butter and mix into dry ingredients with your hands until it reaches a crumbly texture.
Create a well in the center of your bowl and add egg and buttermilk. Mix until just combined.
Fold in shredded cheese and french onions; you want the dough to be just sticky enough to stick to your hands.
Pour mixture onto a floured surface and shape into a circle. Cut into 6-8 scones, the same way you would a pizza. Then place onto a parchment lined baking sheet.
Brush with heavy cream, sprinkle with flakey salt and bake at 350 degrees F for 20-25 minutes or until lightly golden on edges.
