This French toast casserole has an easy blueberry sauce and is made the night before to create a simple and delicious breakfast.
Any time I can make and prep a breakfast the day before and then pop in the oven to bake the next morning I consider it a major win!
What Ingredients do I need for the french toast casserole?
- Bread: I used brioche, but sourdough or a french loaf would be great also!
- Eggs: this forms the custard mixture
- Heavy Cream: you could swap this for milk also if you want to make it a little lighter.
- Vanilla Extract: everything is better with vanilla
- Cinnamon: is it even french toast if there isn’t cinnamon?
- Blueberries: fresh or frozen will work.
- Lemon: we will use both the zest and juice
- Sugar: use this in the blueberry sauce to sweeten it.
How do I make Overnight French Toast Casserole?
- In a sauce pan combine blueberries, lemon juice, lemon zest, and sugar. Cook over medium heat until the sauce has thickened.
- In a 9 x 13 casserole dish place torn pieces of bread.
- In a medium sized bowl combine eggs, heavy cream, vanilla extract, and cinnamon. Mix to combine, pour over top of the bread.
- Cover the casserole dish and place in the fridge overnight (let the mixture combine for at least 6 hours).
- Preheat oven to 350. Place casserole dish in the oven and bake for 30-35 minutes.
- Top with maple syrup and enjoy!
