Viral Watermelon Salad with Feta, Cucumber, and Mint

After seeing this Viral Watermelon Summer Salad all over my social media last summer, I had to see what the hype was all about. I made it and, I get it!

This viral salad is one of the most refreshing summer sides! It has watermelon, cucumber, onion, fresh herbs, crumbled feta, and just the right amount of sweetness and acid from balsamic vinegar and honey!

Ingredients for the Viral Watermelon Salad

  • Watermelon – there is nothing better than fresh in season watermelon
  • Cucumbers – another great refreshing vegetable
  • Feta – I use to hate feta cheese, but now I can’t get enough of it!
  • Red Onion – you can soak this in a little water after dicing to lessen the potency of the raw onion.
  • Mint and Basil – add as much or as little as you like here. I added about 1/4 cup each.
  • White Balsamic Vinegar – if you can’t find white balsamic, you can swap for dark balsamic, but the look of the salad will be darker.
  • Olive Oil – a great emulsion for the dressing
  • Honey – just the right amount of sweetness to this salad.

How to make the viral watermelon salad

  • In a large bowl add watermelon, cucumber, feta, red onion, mint, and basil.
  • In a small bowl combine olive oil, balsamic, and honey. Mix to combine
  • Pour balsamic mixture over watermelon mixture and mix to combine.
  • Enjoy immediately or store in refrigerator.

Ingredients

  • 4 cups watermelon diced
  • 2 cucumbers peeled + diced
  • 1 cup feta crumbled
  • 1 red onion diced
  • mint and basil cut
  • 1/4 cup white balsamic vinegar
  • 1/4 cup olive oil
  • 1 Tbsp honey

Instructions

  • In a large bowl add watermelon, cucumber, feta, red onion, mint, and basil.
  • In a small bowl combine olive oil, balsamic, and honey. Mix to combine
  • Pour balsamic mixture over watermelon mixture and mix to combine.
  • Enjoy immediately or store in refrigerator.

INGREDIENTS
2 tsp butter
2 tsp brown sugar
1/2 tsp vanilla bean paste 
1/8 tsp almond extract 
2 shots espresso
8 oz milk

INSTRUCTIONS
Add butter, brown sugar, vanilla bean paste, and almond extract to a small cup. Brew your espresso over top and mix to full dissolve the sugar. 

FOR AN ICED LATTE: Add ice to a 16 oz cup, then milk, and top with espresso mixture. Mix and enjoy. 

FOR A HOT LATTE: steam milk to desired temperature and pour over espresso mixture.

One of my favorite things about making things homemade is getting to create something you wish existed in the world.

The vision is finally starting to come together and I cannot wait to see everything explode with growth over the next few weeks.
