Ricotta Meatball Bake

This ricotta meatball bake is the perfect weeknight dinner recipe that is quick and easy to make. 

Ingredients for Ricotta Meatball Bake

  • Marinara Sauce - use your favorite brand, I love the Rao's brand
  • Meatballs - I have an included recipe for making your own homemade meatballs, but frequently will use store bought meatballs to make the recipe quick and easy for the weeknight rush. I often will make the meatballs on Sunday, and then put into the fridge or freezer until I'm ready to use them.
  • Ricotta - a herbed ricotta is dropped by the spoonful throughout to create a creamy inclusions
  • Seasoning - Italian blend of seasoning

How to Make Easy Ricotta Meatball Bake

  • Preheat oven to 400.
  • Place your breadcrumbs into a large bowl, and add the milk to them to soak for 5 minutes. Add in your ground beef with, Italian seasoning, salt, pepper, onion, garlic and the egg.
  • Using your clean hands, gently mix the beef together with the ingredients until well-combine. Scoop out 2 tablespoon-size portions of the meat mixture (I like to use my cookie scoop for this), and place onto a tray or large platter to hold.
  • In an oven proof skillet brown the meatballs over medium heat. Approximately 2 minutes on each side. 
  • Cover the meatballs with marinara sauce. Take 1 tablespoon sized scoops of the ricotta mixture and distribute throughout the pan. 
  • Bake in oven for 20 minutes.

Ingredients
  

  • 32 oz marinara sauce
Meatballs:
  • ½ cups breadcrumbs

  • 1 teaspoon Italian seasoning

  • ½ teaspoon pepper
  • ½ onion finely diced
  • 4 cloves garlic minced
  • 1 egg
Herbed Ricotta Mixture
  • 1 cup ricotta cheese
  • 2 teaspoon Italian seasoning

Notes

NOTE: if you do not have an oven safe skillet brown the meatballs and then place into a baking dish. Assemble the remaining ingredients in the baking dish. 
MAKE AHEAD: Make the meatballs up ahead of time and then place in the fridge or freezer until you are ready to make the recipe.
