Air Fryer Cinnamon Sugar Pumpkin Donut Bites

These air fryer cinnamon sugar pumpkin donut bites are so easy to make and an absolutely delicious way to kickstart pumpkin season.

Ingredients

  • Flour – all purpose works best.
  • Yogurt – greek or skyr yogurt is a must. My favorite brand is Painterland Sister’s Icelandic Skyr.
  • Pumpkin Puree – NOT pumpkin pie filling.
  • Baking Soda + Powder – a combination of both to help the donuts puff up.
  • Salt – for flavor
  • Pumpkin Pie Spice + Cinnamon
  • Sugar – granulated sugar is best, but I love using course sugar as well.

How to Make Air Fryer Pumpkin Donuts

  • Preheat air fryer at 350 or oven to 400.
  • In a bowl combine flour, skyr, baking soda, baking powder, wild blueberries, lemon juice, and salt. Mix until dough starts to come together, then pour onto the counter and knead for 5 minutes. Adding more flour if dough becomes too sticky.
  • Section dough into 12 pieces and shape each piece into a round ball.
  • Place round balls onto a piece of parchment paper and brush with melted butter.
  • Bake in air fryer or oven for 5 minutes, turn each ball and bake an additional 5-6 minutes. If baking in oven bake for 6 minutes each side.
  • In a small bowl combine granulated sugar and lemon zest. Mix to combine.
  • Remove donut holes from oven or air fryer, brush with more melted butter and roll in lemon sugar mixture.
  • Enjoy immediately.

INGREDIENTS
2 tsp butter
2 tsp brown sugar
1/2 tsp vanilla bean paste 
1/8 tsp almond extract 
2 shots espresso
8 oz milk

INSTRUCTIONS
Add butter, brown sugar, vanilla bean paste, and almond extract to a small cup. Brew your espresso over top and mix to full dissolve the sugar. 

FOR AN ICED LATTE: Add ice to a 16 oz cup, then milk, and top with espresso mixture. Mix and enjoy. 

FOR A HOT LATTE: steam milk to desired temperature and pour over espresso mixture.

One of my favorite things about making things homemade is getting to create something you wish existed in the world.

I love companion planting because every plant has a purpose. Some help attract pollinators, some deter pests, and some simply help maximize space in the garden beds. And honestly… mixing veggies and flowers together just makes the garden feel magical. 🌼🐝

The vision is finally starting to come together and I cannot wait to see everything explode with growth over the next few weeks.
