apple galette

If you love apple pie, but hate the work that goes into making an apple pie this easy apple galette is going to be perfect! This apple galette can be made with a store bought pie crust, but my super easy homemade pie crust really takes this recipe to the next level without adding a lot of extra work.

Why I Love Galettes

Galettes are an easy alternative to pies. You can think of them as the lazy (but no less delicious) version of a pie. They come together quickly and don’t require the work of rolling out two layers of crust and trying to fit one into a pie pan while fitting the other on top of the gooey filling.

What’s in an Apple Galette

Here is what you will need to make an apple galette:

  • Pie Crust: store bought or homemade will work. I really encourage you to try making a homemade crust though! Give my no chill pie crust a try!
  • Apples: I mean you can’t really have an apple dessert without apples. I used honeycrisp, but any crunchy apple will do the job.
  • Brown Sugar: I love the warmth that brown sugar gives, you could use regular sugar as well.
  • Cinnamon: again the beautiful warmth of cinnamon is essential to that warm apple pie flavor.
  • Corn Starch: helps to thicken the filling so you don’t end up with a runny mess.
  • Vanilla: warmth, flavor, I just love some vanilla.
  • Lemon Juice: the acid really helps to balance out all the sweet happening in the filling.
  • Egg: We are using this for an egg wash on the crust. It gives such a beautiful color to your crust when baked.

How to Make an Apple Galette

Making an apple galette is super simple to do!

  1. Preheat oven to 425.
  2. In a large bowl mix together apples, vanilla extract, cinnamon, brown sugar, cornstartch, and lemon juice.
  3. Pour apple mixture into the middle of a rolled out pie crust on a baking sheet. Keeping 1-2 inches from the sides.
  4. Gently fold up the edges of the pie crust over the apple mixture.
  5. Brush the egg around the edges of the crust. This gives extra color when baked.
  6. Place into oven and bake for 25-30 minutes.
  7. Remove from oven and serve with ice cream or caramel drizzle.

Here are some ideas for how to customize your apple galette:

  • Add different spices to the apples, such as ginger, cloves, or allspice.
  • Use different types of apples, such as Honeycrisp, Gala, or Fuji.
  • Add other fruits to the filling, such as berries, pears, or peaches.
  • Top the galette with nuts, such as almonds, walnuts, or pecans.
  • Serve the galette with ice cream, whipped cream, or crème fraîche.

Help me plan my 2026 garden renovation!

I already have my new greenhouse! I got the @yardistry.structures from @costco.

My husband will be tearing down told play structure and I’ll have so much space to work with.

I just need help determining which direction to place the greenhouse and beds.

Also, is there anything I NEED to make sure to include when planning?

These French Onion Scones are flaky, savory, and packed with caramelized onions, Gruyère cheese, and fresh thyme.

Ingredients
For the Scones:
2½ cups all purpose flour
½ tsp salt
1 tbsp baking powder
12 tbsp cold butter grated
1 egg
1 cup buttermilk
1 cup gruyere cheese shredded
1 tsp thyme
1/4 cup heavy cream
flakey salt

French Onions
2 onions
2 tbsp butter
1/2 tsp salt
1/2 tsp pepper
1/2 tsp thyme
2 cloves garlic minced
1 tbsp worcestershire sauce
1 tbsp balsamic vinegar

Instructions
French Onions
Add butter to skillet. Once hot and melted, add the onions, salt and pepper, and allow them to cook down and deeply caramelize for about 20 to 25 minutes, stirring frequently, until the onions become very dark, soft and jammy.
Add in the garlic, Worcestershire, and balsamic vinegar, and allow it to bubble up and reduce for about 30 seconds. Allow mixture to simmer until reduced.
Set aside to cool.
Scones
Preheat oven to 350℉. In a large mixing bowl, mix together flour, baking powder, and salt.
With a cheese grater, grate your cold butter and mix into dry ingredients with your hands until it reaches a crumbly texture.
Create a well in the center of your bowl and add egg and buttermilk. Mix until just combined.
Fold in shredded cheese and french onions; you want the dough to be just sticky enough to stick to your hands.
Pour mixture onto a floured surface and shape into a circle. Cut into 6-8 scones, the same way you would a pizza. Then place onto a parchment lined baking sheet.
Brush with heavy cream, sprinkle with flakey salt and bake at 350 degrees F for 20-25 minutes or until lightly golden on edges.
