Meal Plan 9/26 – 10/2

The past few weeks I have been posting my meal plans over on Instagram and since I don’t have the fancy link option, I decided a blog post with recipes would be the next best thing! So without further ado here are my meals for the week:

SUNDAY – dinner at my in-laws (ya for not cooking!)

MONDAY – Sirloin steak, Potatoes, Salad

For the sirloin steak I like to marinate it in teriyaki sauce, then season with salt and pepper. I will boil mini potatoes until soft, then top with butter and salt. Then finish off with a regular green salad.

TUESDAY – BBQ Chicken Sandwich + coleslaw

Put 2-3 chicken breasts in instant pot with 1 cup chicken broth. Cook on manual for 15 minutes. Shred chicken and top with your favorite BBQ sauce (if you haven’t seen my shredded chicken hack check it out here). For the coleslaw combine 1 cup mayo, 1 Tablespoon apple cider vinegar, and 1 tablespoon sugar with a bag of coleslaw mix.

WEDNESDAY – Sheet Pan Sausage

THURSDAY – Pork Tenderloin, Salad + Rolls

For the pork tenderloin I like to season it with Santa Maria Seasoning and grill it on the Camp Chef Grill. Then we will add a green salad and crescent rolls.

FRIDAY – Chicken Burrito Bowl

SATURDAY – This is leftover day. We clean up what is left or I leave this day flexible if something didn’t go a planned during the week.

Grill girl summer is officially underway 🔥☀️

Turns out grilling is a whole lot less intimidating when you realize it’s basically just an outdoor oven with better flavor. Thanks @traegergrills. 

Tri-tip for dinner, mixed berry cobbler for dessert, and not heating up the kitchen in the process? That feels like a win to me.

Also, respectfully, we are no longer leaving the grilling to the boys this summer.

This one is for those who don’t really like cake. 

Homemade fresh mint chip ice cream, a fudgy cookie layer, and cookies & cream ice cream all stacked into one very perfect ice cream cake. 

One of my favorite things about making desserts from scratch is getting to create flavor combinations you can’t always find at the store.

And honestly, that’s the fun of homemade, making exactly what you wish existed.

POV: An almond croissant and a latte had a baby and it resulted in your new coffee obsession. 

INGREDIENTS
2 tsp butter
2 tsp brown sugar
1/2 tsp vanilla bean paste 
1/8 tsp almond extract 
2 shots espresso
8 oz milk

INSTRUCTIONS
Add butter, brown sugar, vanilla bean paste, and almond extract to a small cup. Brew your espresso over top and mix to full dissolve the sugar. 

FOR AN ICED LATTE: Add ice to a 16 oz cup, then milk, and top with espresso mixture. Mix and enjoy. 

FOR A HOT LATTE: steam milk to desired temperature and pour over espresso mixture.
