What's for Dinner: 10/31 - 11/6

SUNDAY - Baked Potato Soup

Halloween just seemed like the perfect day for some soup. I will be sharing the recipe later this week, so keep an eye out for it (sign up for the email list to get a notification).

MONDAY - Meatloaf

I didn't end up making meatloaf last week, so I'm going to make it this week! I'm using the Pioneer Woman version .

TUESDAY - Tacos

I'm all about easy this week. So tacos it is!

WEDNESDAY - Sheetpan Sausage

Again another super easy meal! I throw whatever veggies I want, cubed potatoes, and Italian sausage links on a baking sheet with seasoning and olive oil and bake until everything is cooked.

THURSDAY - Pork Chops and Rice

Pork chops is one of our favorites to cook on the grill. Brody is obsessed with cheesy rice-a-roni so I will make that and salad as sides.

FRIDAY - Cream Chicken and Rice Soup

This soup is perfect for a chilly fall day (and is pretty easy to make).

Saute 2 chopped carrots, 2 celery stalks, and diced onion in 3 tablespoons of butter. Add in 1 teaspoon of rosemary, thyme, sage, and pepper, 2 teaspoon of salt and 4 cups of chicken stock. Simmer for 8-10 minutes. In a separate pan add 5 tablespoons of butter and ½ cup flour. Once combined add ½ cup heavy cream and 1 ½ cup milk. Cook on low until thickened. Add milk mixture, a shredded rotisserie chicken, and 3 cups of cooked rice to the broth and enjoy.

SATURDAY - This is leftover day. We clean up what is left or I leave this day flexible if something didn't go a planned during the week.

    • 1 ½ cup milk

    • 1 rotisserie chicken (shredded)
    • 1 teaspoon rosemary

    • 2 teaspoon salt
    • 1 teaspoon pepper
    • ½ cup butter
    • 2 cloves garlic
